Coffee needs to rest

Right after roasting, beans release carbon dioxide. Coffee that is too fresh makes a fizzy, unstable cup. It needs 48 hours of rest before shipping.

A typical week

  • Monday: the week’s orders close at midnight.
  • Tuesday: roasting, from 7 am to 4 pm.
  • Wednesday: every batch is cupped, then bagged.
  • Thursday: shipping, for delivery on Friday or Saturday.

What if I need coffee on a Monday?

Drop by the roastery: the counter always keeps a few bags from the week, and pickup at the roastery is free.
